Für den Grundbedarf bietet sich natürlich Wasser an, aromatisiert mit ein paar Minze- und Salbeiblättern und ein paar Zitronenscheiben oder vermischt mit den verschiedenen Sirups von Voelkl oder den extravaganten Sirupen von Höllinger.

Rezeptideen

Pink Pasta

Zutaten für 2 Personen und 45 Minuten Zeit:
250g Rote Bete, 150g Feta, 3 große Knoblauchzehen, 250g Nudeln (z.B. Tagliatelle), 100g Walnüsse, 1 Päckchen Kresse, 3 EL Olivenöl, Salz, Pfeffer, 100ml des Nudel-Kochwassers

Backofen auf 220°C vorheizen. Ein Backblech mit Backpapier belegen. 
Die gewaschene Rote Bete grob würfeln, zusammen mit drei geschälten, ungeschnitten  Knoblauchzehen in einer Schüssel mit 3 EL Olivenöl vermengen und gleichmäßig auf dem Backblech verteilen. 25 Minuten backen, nach der Hälfte der Zeit wenden. In der Zwischenzeit 250g Nudeln in gesalzenem Wasser nach Anleitung auf der Packung kochen.
Abschütten, ACHTUNG: dabei 100 ml des Kochwassers auffangen! Walnüsse knacken, grob hacken und in einer Pfanne vorsichtig anrösten. Die Kresse abschneiden. Die gebackene Rote Bete, den Knoblauch und 75g Feta mit dem aufgefangenen Nudelwasser im Mixer oder mit dem Pürierstab fein mixen. Mit Salz und Pfeffer abschmecken. Die Nudeln mit der Rote Bete-Sauce vermengen, mit dem restlichen zerbröselten Feta, den Walnüssen und der Kresse bestreuen. 
Tipp: Statt der Kresse kann man auch Rucola verwenden. Die Walnüsse können durch Haselnüsse oder Pinienkerne ersetzt werden.

Blumenkohl mit Fenchel-Zwiebel-Sauce

Zutaten:
1 Blumenkohl, 1 Fenchelknolle, 250g Zwiebeln, 4 getr. Tomaten, 1-2 EL Olivenöl, 1/2 Bd Petersilie, 150 ml Sahne, Kräutersalz, Cayennepfeffer, 1 Prise Zucker, 1 EL Senf, 200g Mozzarella

Blumenkohl putzen, waschen, den Strunk entfernen und in 2-3 cm dicke Scheiben schneiden. In Salzwasser ca. 6-8 Minuten bissfest garen. Herausnehmen und abtropfen lassen. In der Zwischenzeit Zwiebeln und Fenchel putzen und fein würfeln. Tomaten in feine Streifen schneiden. Öl in einer Pfanne erhitzen. Erst die Zwiebelwürfel glasig dünsten, dann Fenchel und Tomatenstreifen zugeben und alles zugedeckt ca. 10 Minuten dünsten, dabei zwischendurch umrühren. 
Die gehackte Petersilie in der Sahne pürieren, unter die Fenchel-Zwiebeln heben und alles kräftig mit Salz, Cayennepfeffer, Zucker und Senf abschmecken. 
Die Blumenkohlscheiben in eine Auflaufform schichten, die Sauce darüber geben und obenauf den zerpflückten Mozzarella geben. Im Ofen bei 200°C auf der mittleren Schiene 15-20 Minuten überbacken. 
Eine tolle Beilage zu gegrilltem Fleisch. 

Rote Bete - Linsensalat mit Apfel-Meerre

Zutaten:
300g Rote Bete, 200g Puy Linsen 
fürs Dressing: 3 TL Meerrettich (Glas), 5 EL Apfelsaft, 1 EL Apfelessig, 2 EL mildes Olivenöl, 1/2 Apfel, Salz, Pfeffer

Rote Bete in Salzwasser kochen, danach schälen und in kleine Würfel schneiden. Die Linsen nach Packungsanweisung kochen, abgießen und abkühlen lassen. Linsen und Rote Bete in eine Salatschüssel geben. 
Für das Dressing den Apfel vom Kerngehäuse befreien und in kleine Würfel schneiden. Die restlichen Zutaten gut miteinander verrühren und dann die Apfelwürfelchen unterheben. Das Dressing mit den Rote Beten und den Linsen vermischen, eventuell noch mit Salz und Pfeffer kräftig abschmecken

Tahina Gemüsepfanne mit einem

Dash Cumin und gegrilltem Mais

Zutaten:
1 große Süßkartoffel, 1,5 EL Olivenöl, Meersalz, Paprikapulver geräuchert

Die Süßkartoffel schälen. Mit einer Küchenreibe in sehr feine, gleichmäßige Scheiben hobeln. Den Backofen auf 150°C Umluft vorheizen. Ein oder falls vorhanden, mehrere Backbleche mit Backpapier auslegen. 
Die Chips in einer Schüssel mit Olivenöl, Salz und Paprika gründlich vermischen. Chips einzeln auf den Backblechen verteilen und solange backen, bis sie goldbraun sind - Nach der Hälfte der Zeit die Chips einmal wenden. Die Backzeit ist abhängig vom Ofen und der Dicke der Chips. (ca. 90 Minuten). Danach die Chips eine Viertelstunde auskühlen lassen - jetzt werden sie erst richtig kross ...
