'Wheat is one of the oldest cultivated cereals. Type 550 is crisp, has good processing properties and produces loose, fine-pored doughs.
'CAISERSCHMARRN FOR 2 PORTIONS3 eggs1-2 tsp sugar1 pinch of salt2 tbsp butter or oil150 ml milk180 g flour1 tbsp raisins
(optional) powdered sugar (for sprinkling)Separate the eggs. Beat the egg whites with salt until firm. Whisk the egg yolks with the granulated sugar, add the milk and flour. Mix with a whisk
until you have a nice, lump-free batter. Fold the beaten egg whites into the batter and mix carefully. Fry in a pan with a little butter or oil on both sides. Tear into pieces with a fork.
Sprinkle with a little sugar and toss briefly in the pan so that the sugar caramelizes a little. Sprinkle with powdered sugar and serve.
