Our ÖMA Pecorino Romano DOP is a specialty from Sardinia and is made from 100% organic sheep's milk. Typical for this cheese are the large cylindrical shapes, with a wheel weight of 18 - 20 kg. The cheeses are matured at approx. 12 - 16 °C for between 5 and 8 months. Its shelf life and characteristic, piquant aroma come from the 100 days during which it is very carefully salted. The white to straw-colored paste is very firm to hard. The young cheese is ideal as a table cheese, matured and a little older it is an excellent grating cheese.our tip: Pecorino Romano with a little Crema di Balsamico! In 1992, we started the first organic pecorino project in Sardinia with our Italian partners. The landscape is characterized by barren mountains and green hills, criss-crossed by streams. Here the sheep graze on lush meadows that give their milk its Sardinian flavor. The milk is processed into organic cheese of the highest quality using traditional Sardinian recipes and production techniques. The cheese-making trade has a long tradition in Sardinia. There is evidence that the first Sardinian cheeses were made as early as the 18th century, mainly from goat's milk. Today, Pecorino Sardo DOP is one of the cheeses with a 'protected designation of origin' and is popular all over the world.
ÖMA Pecorino Romano is actually a classic table cheese. Today, however, it is increasingly used (when it is of the appropriate age) for grating and is indispensable in the preparation of various Italian dishes.
