The best Demeter spelt is used for the spelt shell pasta. In the Spielberger mill, the grain is ground in several stages to a medium-light flour that still contains valuable components of the grain. The type 812 flour is then processed by hand into shell pasta. Thanks to the spelt, this pasta tastes delicately nutty and is particularly suitable for use in soups. The beautiful shell noodles provide enjoyment and fun for young and old alike when eating. 100% of the packaging for the noodles is made from wood, a renewable raw material. They can be completely collected in waste paper and are 100% recyclable. Through a long-term partnership with the Bergwaldprojekt e.V., Spielberger Mühle finances the planting of trees and the maintenance and preservation of the existing forest every year. The latter enables the forest to rejuvenate itself naturally - i.e. new trees grow and the forest thrives. This closes the paper cycle by offsetting paper consumption for packaging and giving something back to nature.spelt tastes delicately nutty. With the beginning of the organic movement, spelt was rediscovered as an unadulterated original grain. Until the Middle Ages, it was considered the most important bread grain. It was only with the intensification of agriculture and the increased use of artificial fertilizers that the grain fell into oblivion. There was a very simple reason for this: unlike wheat, spelt hardly reacts to the application of nitrogen fertilizer with an increase in yield. In organic farming, however, the positive properties of the grain are appreciated. In addition to its fine nutty taste and better digestibility, spelt is characterized by the fact that it also grows well in areas with higher rainfall and at higher altitudes.
Basic recipe: Add the spelt shell noodles to the soup at the end of the cooking time and cook for 3-4 minutes so that the noodles are al dente; spelt shell noodles are particularly suitable as a soup garnish. They are tasty for young and old alike and, thanks to their attractive shape, are a pleasure to eat.
