'With its nutty, strong flavor, spelt has conquered a firm place in wholefood cuisine. The whole grain is ideal as a side dish, as a soup garnish or for salads and vegetable stir-fries.
'Preparation for 2 people: Soak 100 g spelt grains in 200 ml water overnight. The next day, cook in the soaking water over a low heat for approx. 40 minutes. Only add salt or stock at the end and leave to soak for a further 15 minutes.
