Wird das Kraut als Rohkostsalat zubereitet, sollte man es nach dem Hobeln salzen und kräftig durchkneten, bis Saft austritt. Den Saft abgießen und das Kraut weiterverarbeiten.
Ganze Krautblätter können für gefüllte Krautwickel oder Krautrouladen verwendet werden.
