Taleggio DOP

Taleggio is a very old type of cheese that was probably produced before the 10th century. With the traditional use of the alpine pastures, the habit of herding cattle together in the municipality of Taleggio at particular times of the year has developed. The milk produced was processed into cheese using traditional techniques that evolved over time and adapted to the development of the area. Documents dating back to the 13th century report on trade and bartering with Taleggio and other cheeses. Taleggio was awarded the designation of origin in 1988 and became a cheese with a protected designation of origin in 1996 with the EC regulation. Taleggio may only be produced and matured in certain provinces of Lombardy, Piedmont and Veneto in the province of Treviso.
A Chianti Classico or a Recioto di Soave are recommended as suitable wine accompaniments.
