Wild garlic sometimes grows in large groups and is one of the most delicious springtime treats. The Romans called the plant -Allium ursinum- - bear's garlic - 2000 years ago. It is assumed that the name, as with many other powerful plants, refers to the symbolic power and strength of the bear. Thanks to its bulb, wild garlic sprouts early in the year and thus provides attractive food, even for bears that wake up hungry after hibernation. master cheesemaker Max Sontheim also knows about the plant's flavor and adds it to his cheese paste made from high-quality Allgäu organic milk. Using traditional methods, he conjures up a fine, tasty semi-hard cheese, which he matures for 6 weeks in the cellar and cultivates with red cultures. The ÖMA Brummbär puts a culinary smile on the face of even the grumpiest of souls in spring. Aromatic semi-hard cheese made from the best Allgäu organic milk is the basis of our seasonal family of colorful characters. Various ingredients give our handy wheels of cheese that "certain something" in terms of both taste and appearance. The seasonal cheeses range from spicy wild garlic in spring, onions and chives with an affinated wheat beer rind in summer, crunchy pumpkin seeds in autumn and fine truffles in the winter months.
Cheese platter - seasonal variety? This is easy with our four varieties of seasonal semi-hard cheese. This semi-hard cheese is a real hit, not only visually but also in terms of taste. It is also ideal with dark bread and a good sip of black beer.
